- 2 cups pumpkin purée (or roasted pumpkin)
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 2 cups vegetable broth
- ½ tsp ground ginger
- ¼ tsp nutmeg
- Salt & pepper to taste
- ½ cup coconut milk for creaminess (Optional)
Heat olive oil in a pot over medium heat.
Add onion and garlic; sauté until soft (about 5 minutes).
Stir in pumpkin purée, broth, ginger, nutmeg, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Use an immersion blender to blend until smooth.
Stir in coconut milk and simmer another 5 minutes.
