Ingredients
  

  • 2 large cucumbers, peeled and deseeded
  • 2 cups plain Greek yogurt or natural yogurt
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh mint leaves, finely chopped
  • 1 small garlic clove (optional for adults)
  • 2 tbsp cold water (if needed)
  • Salt and black pepper to taste (for adults only)

For Garnish

  • Extra cucumber cubes
  • Fresh dill
  • Mint leaves
  • A drizzle of olive oil

Instructions
 

  • Prepare the Cucumbers
    Peel and deseed the cucumbers. Roughly chop them into chunks.
  • Blend Ingredients
    Add cucumbers, yogurt, olive oil, dill, and mint to a blender.
    Blend until smooth and creamy.
    If the soup seems too thick, add a little cold water.
  • Chill
    Transfer to a bowl or container and refrigerate for at least 30 minutes for the best flavor.
  • Serve
    Pour into bowls and garnish with diced cucumber, fresh herbs, and a drizzle of olive oil.
    Serve cold.
