Ingredients
  

  • 500 g fresh mushrooms (button, cremini, or mixed)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons butter or olive oil
  • 3 cups vegetable or chicken stock
  • 1 cup milk or cream (optional for extra creaminess)
  • 1 tablespoon all-purpose flour
  • ½ teaspoon thyme
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions
 

  • Prepare mushrooms: Wipe clean and slice evenly.
  • Sauté aromatics: In a large Dutch oven, heat the butter or oil and cook the onion and garlic until soft.
  • Cook mushrooms: Add mushrooms and thyme, sauté 8–10 minutes until golden.
  • Thicken soup: Stir in flour for 1–2 minutes.
  • Simmer: Add stock, simmer 15 minutes.
  • Blend: Use a high-speed blender to partially blend the soup for a creamy texture, add milk or cream if desired.
  • Serve: Garnish with parsley, serve with bread or in a bowl as a starter.
