Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp olive oil
  • ½ cup warm milk
  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella
  • ½ cup pureed vegetables
  • tiny pinch of garlic powder (very mild)
  • 1 tsp olive oil or melted butter

Instructions
 

  • Mix flour, baking powder, and salt.
  • Add olive oil and warm milk, stir until soft dough forms.
  • Knead lightly for 1–2 minutes. Let rest while making the filling.
  • Combine ricotta, mozzarella, and pureed vegetables until smooth.
  • Adjust consistency with a teaspoon of milk if needed.
  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Divide dough into 6 pieces, roll each into a 4–5 inch circle.
  • Spoon filling on half of each circle, fold over, pinch edges to seal.
  • Brush calzones with olive oil or melted butter.
  • Bake 15–18 minutes until golden brown but still soft.
