- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 2 tsp olive oil
- ½ cup warm milk
- ½ cup ricotta cheese
- ½ cup shredded mozzarella
- ½ cup pureed vegetables
- tiny pinch of garlic powder (very mild)
- 1 tsp olive oil or melted butter
Mix flour, baking powder, and salt.
Add olive oil and warm milk, stir until soft dough forms.
Knead lightly for 1–2 minutes. Let rest while making the filling.
Combine ricotta, mozzarella, and pureed vegetables until smooth.
Adjust consistency with a teaspoon of milk if needed.
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Divide dough into 6 pieces, roll each into a 4–5 inch circle.
Spoon filling on half of each circle, fold over, pinch edges to seal.
Brush calzones with olive oil or melted butter.
Bake 15–18 minutes until golden brown but still soft.
