Ingredients
  

  • 2 cups green peas (fresh or frozen)
  • 1 medium potato (for creaminess)
  • 1 small onion (optional, for flavor base)
  • 2 cups vegetable broth or water (low sodium)
  • 10 fresh mint leaves
  • 1 tbsp olive oil
  • Salt (optional for adults only)

Instructions
 

  • Sauté the base
    Heat olive oil in a pot. Add chopped onion and cook until soft and translucent.
