Ingredients
  

Pancakes:

  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 ¼ cups milk (dairy or plant-based)
  • 1 large egg
  • 3 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract

Instructions
 

Make the Pancake Batter

  • In a large bowl, combine flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
  • Pour the wet ingredients into the dry ingredients and mix until smooth. A few small lumps are fine — don’t overmix!

Cook the Pancakes

  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour ¼ cup of batter per pancake onto the skillet.
  • Cook for 2–3 minutes until bubbles form on the surface. Flip carefully and cook another 1–2 minutes until golden.
  • Repeat until all batter is used. Keep pancakes warm in a low oven if needed.

Decorate Your Christmas Pancakes

  • Let the pancakes cool slightly.
  • Choose a pancake and pick a character to create:
  • Santa: Strawberry hat, banana face, blueberry eyes, red berry nose
  • Reindeer: Banana antlers, blueberry eyes, red berry nose
  • Snowman: Stack two small pancakes, blueberry eyes, banana carrot nose, strawberry scarf
  • Gingerbread figures: Use fruits for buttons and eyes, banana slices for hands or hat
  • Dessert twist: Add a swirl of whipped cream to Santa’s hat, snowmen, or on the plate as fluffy snow. Drizzle chocolate or Nutella, or serve with a scoop of ice cream for a festive treat.
