This homemade pistachio barfi recipe is a classic Indian sweet with a soft, creamy texture and a delicate milk flavor. Made with milk powder, condensed milk, ghee, cardamom, and topped generously with chopped pistachios, this white barfi has an elegant appearance and a rich melt-in-the-mouth texture.
Unlike colorful pistachio sweets that use pistachio paste or food coloring, this traditional-style pista barfi keeps the beautiful natural white color of milk-based mithai. The bright pistachio pieces on top add a lovely contrast, a gentle nutty flavor, and a festive finish.

Ingredients
  

  • 2 cups milk powder
  • 1 cup sweetened condensed milk
  • ½ cup full-fat milk
  • 3 tbsp ghee
  • ½ tsp cardamom powder
  • Few strands of saffron (optional)
  • 1 tsp rose water (optional)
  • ¼ cup finely chopped pistachios

Instructions
 

  • Grease a square tray with ghee and set aside.
  • Heat ghee in a heavy-bottom pan over low heat.
  • Add milk powder, condensed milk, and milk. Stir continuously until smooth.
  • Cook on low heat until the mixture thickens and starts leaving the sides of the pan.
  • Add cardamom powder, saffron, and rose water. Mix well.
  • Transfer the mixture to the prepared tray and spread evenly.
  • Sprinkle chopped pistachios on top and gently press them into the surface.
  • Allow the barfi to cool completely, then refrigerate for 1–2 hours.
  • Cut into 20 square or diamond-shaped pieces and serve.
