Sometimes I like to switch things up for breakfast or brunch, and that’s when savory Belgian waffles with avocado, eggs, and other customizable toppings come to the rescue. These waffles are crisp, fluffy, and versatile—they’re perfect for adding whatever you love: creamy avocado, perfectly cooked eggs, fresh microgreens, juicy tomatoes, or even smoked salmon for extra protein.
I especially love making them for weekend brunches, quick lunches, or even packing them in picnic bags—they hold their toppings well and taste just as good at room temperature. Each waffle is a little blank canvas for flavors, textures, and colors, making breakfast or brunch feel special every time.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 eggs (separated)
  • 1&3/4 cups milk
  • ¼ cup olive oil or melted butter
  • 1 tsp garlic powder or dried herbs (optional, for flavor)
  • 1-2 ripe avocados, sliced or mashed
  • 2-4 eggs (cooked, fried, poached, or scrambled)
  • Handful of fresh microgreens
  • Cherry tomatoes, halved or sliced
  • Salt & pepper to taste
  • drizzle of olive oil or balsamic glaze optional
  • smoked salmon or cooked salmon for extra protein optional

Instructions
 

  • Prepare the Savory Belgian Waffle Batter

    Mix flour, baking powder, and salt in one bowl. Whisk the egg yolks, milk, melted butter, and optional garlic or herbs in another bowl. Combine wet and dry ingredients, then gently fold in the whipped egg whites for a light, airy waffle that holds toppings well.
  • Cook the Savory Belgian Waffles

    Preheat your waffle iron and lightly grease it. Pour in the batter and cook until golden brown and crisp. The smell of waffles cooking is always a highlight—I can’t resist sneaking a taste before assembling!
  • Assemble the Savory Belgian Waffle

    Place the cooked waffle on a plate. Spread mashed avocado or layer sliced avocado on top. Add eggs (cooked, fried, poached, or scrambled) and, if you like, add smoked salmon or cooked salmon for extra protein. Scatter cherry tomatoes and microgreens over the top. Season with salt, pepper, and drizzle olive oil or balsamic glaze.
